Buttermilk curry

Take about 2 cups of curd or buttermilk and beat it up with water, salt, turmeric powder and rice flour until smooth. Crush a 1-inch piece of ginger with one green chilli and a few coriander leaves. Heat oil in a frying pan or kadai and add mustard seeds, fenugreek seeds, cumin seeds, asafoetida, curry leaves, chopped ginger, cilantro and green chilli and saute for around a minute. Lemon rice

Add turmeric powder and grated coconut. Turn off the burner. Add lemon juice and salt as per taste and mix in the rice. This preparation stays good for two days at room temperature and hence, is ideal for carrying while travelling.

Masala dosa

Prepare the batter for the dosa and refrigerate overnight. Prepare the masala with mashed boiled potatoes. In a frying pan heat oil and add mustard seeds and channa dal. Add green chillies, curry leaves and onion slices. Add turmeric powder, salt and water and let it boil. Add the mashed potatoes with green peas. Sprinkle chopped cilantro on it. On a hot dosa griddle, pour one spoonful of the dosa batter and spread it evenly in a circular pattern. Add a few drops of oil or ghee on it and allow it to get completely cooked. Once done, place the masala in the middle and wrap up the sides of the dosa. Hot sambhar and coconut chutney are a must to be served with the delicious dosa.
