Coconut milk – ½ cup

White Rum – 4 tabsp

Put pineapple juice in a blender then add coconut milk, white rum, crushed ice and sugar to the blender. Blend all the ingredients together and pour it into a glass. Before serving the cocktail garnish it with a slice of Pineapple or maraschino cherry.

Peel the fresh Pineapple and cut into 8 slices. Coat both sides of the pineapple slices with soft brown sugar. Heat the butter in a frying pan with sugar on medium heat. When hot, put the pineapple slices in the pan in a single layer then cook 3 to 4 minutes until they get the brown colour. Flip the other side also then move the plate from heat.
